Red Wine Vinegar & Honey Beetroot

Details:
Peel beetroot and cut into wedges. Place beetroot, vinegar & honey into a pot. Bring to the boil then cover with foil and place in an oven at 150*C. Cook for 45 minutes, beetroot should be soft all the way through. Let cool and store in the liquid. Serving suggestions - Beetroot, goat's cheese & pecan salad with roasted duck and sauteed potatoes.
