Anglaise
Details:Cream sugar and yolks to ribbon stage. Boil milk and cream with split vanilla bean. Pour onto yolk mixture whilst whisking. Place back into saucepan and stir over low heat until masks the back of the spoon. Place immediately on ice to cool.
