Banana Souff'e

Details:
Blend banana with honey and a squeeze of lemon. Whisk egg whites till they start to lighten and fluff. Add sugar 1 spoon at a time whisking in between. Whisk to a soft peak. Add 2 large dessert spoons of the banana base, whisk back to a soft peak. Fill a ramekin and flatten the top with a pallet knife. Bake at 180oC for 4 minutes, turn tray and bake for another 4 minutes. Serve straight away.
