Smoked Chicken, Rocket & BBQ'd Pears Salad


Cut the 3 pears length ways into quarters, de-seed and cut in half again. Grill each piece on a hot BBQ grill until slightly soft & there are nice grill marks on each side (2-3mins each side). Set aside to cool. Cut remaining 2 pears (from dressing ingredients) into quarters then discard the skin. Over a bowl squeeze pear pulp to axtract as much of the juice as possible, discard the pulp. Add remaining dressing ingredients to pear juice. Whisk well. Add a good pinch of sea salt. Set aside for at least 30 mins to allow flavours to mature. Arrange rocket on your favourite platter or serving dish. Top with onion, smoked chicken & pears. Whisk dressing & dress salad using approximately 1/3 of the liquid. Crumble blue cheese over the salad and scatter with toasted peacans as desired. Serve with remaining dressing on the side. Enjoy!
