Kale with Sun Dried Tomatoes & Olives
Details:Bring large pot of salted water to boil then add kale, cook till just wilted. Drain and run under cold water. Drain and chop. Set aside.
Heat oil in pan and add garlic and onion, cook till onion is soft. Add tomatoes and sun dried olives and stir. Add kale and gently toss so that all ingredients are combined.
Place on a serving dish and sprinkle with fetta and macadamias. Season with salt and freshly cracked black pepper and a squeeze of lemon juice. Enjoy
This recipe can also be dressed up a little more by adding fresh beans, fingers of red capsicum and halved cherry tomatoes to the pan before the kale.
