Smashed Celeriac


1. Heat the oil in a shallow pan and sizzle the garlic for 1 minute until fragrant. Add the chilli, thyme and celeriac. Toss everything to coat in the oil, then season with salt.


2. Turn the heat down to low and cover the pan. Cook very gently for about 40 minutes or so until celeriac is soft enough to smash.


3. Stir occasionally and add Vegetable stock or white wine if it starts to stick. When cooked, smash the celeriac lightly with a fork and serve.
