Today we have thousands of varieties that are identifyable by colour, shape, cooking characteristics and nutritional value. There is about 600,000 tonnes of potatoes produced for the fresh food market each year with even more being grown for the processing (chipping, dehydrating, crisping) market.

Nutrition - Typically a 200g potato will contain:- 200 calories, 4.6g protein,51g carbohydrate, 0.2 fat, 4.8g dietary fibre and is cholesterol free.

It will contain about 16mg niacin, 7mg vitamin B6, 26mg vitamin C, 2.75 mg iron, 55 mg magnesium, 22mg thiamine,1.12g vitamin B5 and 600 g potatsium.

Cooking - Most potatoes can be boiled, roasted and mashed. Some can be chipped and a very few (mainly tastless ones) can be crisped.
